Apple Carnitas Salad

Spring can never come too soon, and the flavors of the season marry beautifully with tender and authentically spiced carnitas in a deliciously fresh salad that's great as a side dish or a whole meal.

Ingredients
½ lb. Charlie's Pride Carnitas
1 Gala or other type of crisp apple, julienned (soak in lemon or lime juice to prevent browning)
½ cup Dried cranberries
2 heads Iceberg lettuce
⅓ cup Honey
½ cup Walnut halves, toasted
8 oz Light salad dressing
Directions

In a small sauce pot over medium heat, warm honey until bubbling, then add walnuts. Continue to cook while stirring for 2 mintues, making sure to thoroughly coat walnuts in honey; remove and place on sheet tray to cool. Portion lettuce between 4 salad plates, top with chunks of carnitas, then apples. Finish with a sprinkle of dried cranberries and honey glazed walnuts, then drizzle with your favorite salad dressing and serve immediately.
