
Carnitas are stuffed into a toasted baguette with pickled red onions, smoked Cheddar cheese, hoisin aioli and cilantro.

Ingredients:
| 1 lb | Charlie’s Pride Carnitas |
| ¼ cup | Red wine vinegar |
| ¼ cup | Water |
| 2 Tbsp | Sugar |
| 1 tsp | Kosher salt |
| 1 | Red onion, sliced |
| ¼ cup | Mayonnaise |
| 1 Tbsp | Hoisin sauce |
| 1 | Large baguette, sliced crosswise into ¼’s, then lengthwise for each |
| 2 Tbsp | Cilantro leaves |
| 4 slices | Smoked Cheddar cheese |
Directions:
Pickle onions: in a saucepot, mix vinegar, water, sugar and salt. Bring to boil and pour over onions; chill. In a small bowl mix mayonnaise and hoisin sauce, set aside. Toast baguette ¼’s; spread bottom halves evenly with hoisin mayo, then layer with carnitas, pickled onions, cilantro and cheese. Top with remaining baguette halves and serve.
