
Charlie’s Pride BBQ Pork is simmered with diced red peppers, carrots and red onions, then covered with a smoked Gouda enhanced cornmeal crust and baked to a golden brown.

Ingredients:
| 1 lb. | Charlie’s Pride Seasoned Pork in BBQ Sauce |
| ¼ cup | Diced red bell pepper |
| ¼ cup | Diced red onion |
| ¼ cup | Diced carrot |
| 1 Tbsp | Olive oil |
| ½ cup | Chicken stock |
| 1 cup | Cornmeal |
| ½ Tbsp. | Salt |
| 3 Tbsp. | Butter |
| 3 Tbsp. | Shredded smoked Gouda |
| 1 tsp. | Chili powder |
Directions:
| 1. | Preheat oven to 350°F. | |
| 2. | In a pot, sauté peppers, onion and carrot in olive oil for 5 minutes. | |
| 3. | Add Charlie’s Pride Seasoned Pork in BBQ Sauce and chicken stock. Cook for 10 to 12 minutes on medium heat. | |
| 4. | Ladle pork mixture into a pie pan or casserole dish. | |
| 5. | In a stand mixer with a paddle attachment, mix cornmeal, salt, butter, cheese and chili powder. | |
| 6. | Roll cornmeal dough out to ½ inch thickness to fit the pan. Drape dough over the pan; pinch the edges to seal. | |
| 7. | Bake for 25 to 30 minutes. Let stand 10 minutes before serving, and enjoy. |
