Eggs Benedict “Charlie’s Way”

Pamper yourself with the rich taste of Charlie’s Pride Kurobuta Ham, nestled beneath freshly poached eggs and warm Hollandaise sauce, all on a toasted English muffin. But don’t forget a splash of hot sauce, and you’ll be sure to wake up!

Ingredients
1 lb. Charlie’s Pride Kurobuta Ham, sliced
3 Tbsp White vinegar
1Tbsp Salt
1 pkg Hollandaise mix (plus ingredients called for on packet to prepare)
4 English muffins (split)
1-2 Tbsp Butter or margarine
8 Eggs
  Your favorite hot sauce (optional)
Directions

Preheat oven to 250°F. In a large diameter pan, bring 3 quarts water to simmer with vinegar and salt. Prepare Hollandaise sauce according to packet directions and keep warm. Toast muffins, then lightly butter. Warm up ham in a separate pan and evenly distribute onto toasted muffins. Place on baking pan and keep warm in oven. Break eggs one at a time into simmering water and separate with a slotted spoon. Poach for about 2-3 minutes until firm but yolk is still soft. Transfer eggs (drained well with slotted spoon) onto muffins. Top with Hollandaise sauce, then dot with hot sauce as desired. Enjoy with orange slices or fresh melon.
