Bleu Grilled Cheese with Roast Beef

Charlie’s Pride Roast Beef is grilled into a delicious sandwich with bleu cheese, caramelized onions and peppery arugula.

1 lb. Charlie’s Pride Roast Beef, thinly sliced
8 slices Sourdough bread
4 slices Cheddar cheese
1 cup Arugula
1 cup Caramelized onions
1 cup Crumbled bleu cheese
2 Tbsp. Butter, divided
  1. Evenly top four heels of bread with cheddar, arugula, Charlie’s Pride Roast Beef, caramelized onion and bleu cheese crumbles, then crown with remaining bread slices.
  2. In sauté pan over medium heat, melt enough of the butter to coat the pan surface.
  3. Toast each sandwich 3 minutes per side until golden brown, adding more butter to pan as needed.
  4. Serve immediately and enjoy!
