Cajun Roast Beef Roll

Roll out the flavor with this spicy beef & Cheddar sandwich mellowed with a touch of sweetness from caramelized red peppers.

Ingredients
1 lb Charlie's Pride Cajun Roast Beef, thinly sliced
½ lb Fresh red bell peppers, sliced
oil, as needed to caramelize peppers
2 Tbsp Mayonnaise
2 tsp Cumin, ground
4 Sandwich rolls
4 slices Cheddar cheese
Directions

Preheat oven to 350°F. Caramelize pepper slices in a sauté pan over medium-high heat about 3 minutes, set aside. Mix together mayonnaise and cumin; spread evenly onto each open sandwich roll. Layer bottom halves with beef slices, then top with peppers and cheese. Close each sandwich and heat in oven until cheese is melted; serve immediately.
