Charlie’s Pride Carnitas are wrapped with warm corn tortillas then topped with enchilada sauce, shredded cheese and green onions.

Ingredients:
1 lb. | Charlie’s Pride Carnitas |
12 | Corn tortillas |
1½ cups | Enchilada sauce |
2 cups | Shredded Mexican cheese |
¼ cup | Sliced green onions |
Directions:
1. | Preheat oven to 350°F. | |
2. | Microwave tortillas for 20 seconds, so they become pliable. | |
3. | In a large baking dish, pour ½ cup of enchilada sauce. | |
4. | Fill each tortilla with equal amounts of Charlie’s Pride Carnitas, roll and place into baking dish. | |
5. | Pour remaining enchilada sauce over the rolled enchiladas. | |
6. | Evenly top sauced enchiladas with cheese. | |
7. | Bake for 15 minutes. | |
8. | Remove from oven and top with sliced green onions. Serve immediately and enjoy! |
