Red Chili Carnitas Enchiladas

Charlie’s Pride Carnitas are wrapped with warm corn tortillas then topped with enchilada sauce, shredded cheese and green onions.

Ingredients
1 lb. Charlie’s Pride Carnitas
12 Corn tortillas
1½ cups Enchilada sauce
2 cups Shredded Mexican cheese
¼ cup Sliced green onions
Directions
  1. Preheat oven to 350°F.
  2. Microwave tortillas for 20 seconds, so they become pliable.
  3. In a large baking dish, pour ½ cup of enchilada sauce.
  4. Fill each tortilla with equal amounts of Charlie’s Pride Carnitas, roll and place into baking dish.
  5. Pour remaining enchilada sauce over the rolled enchiladas.
  6. Evenly top sauced enchiladas with cheese.
  7. Bake for 15 minutes.
  8. Remove from oven and top with sliced green onions. Serve immediately and enjoy!
