Chili Con Carnitas

Warm your soul with a savory bowl of chili, featuring Charlie’s Pride Carnitas and juicy tomatoes, seasoned with onions, cumin and a mild kick of green chiles.  Serve with cornbread and it’s a hearty start to a delicious meal!

Ingredients
1 lb Charlie’s Pride Carnitas
1 Tbsp Vegetable oil
1 Small onion, diced
1 tsp Cumin
1 ½ tsp Garlic powder
2 (14.5 oz) Cans diced tomatoes
1 (4 oz) Can diced green chiles (1/2 cup)
2 cups Vegetable stock
  Salt and pepper to taste
  Mexican cheese (optional)
  Tortilla strips (optional)
Directions

In a heated pot, add oil and onions, sauté until translucent.  Add cumin, garlic, tomatoes, green chiles and vegetable stock; simmer 15 -20 minutes.  Add carnitas and simmer another 10 minutes, adding salt and pepper to taste.  Enjoy topped with your favorite Mexican cheese and crunchy tortilla strips.
