|1 lb||Charlie’s Pride Carnitas|
|1 Tbsp||Vegetable oil|
|1||Small onion, diced|
|1 ½ tsp||Garlic powder|
|2 (14.5 oz)||Cans diced tomatoes|
|1 (4 oz)||Can diced green chiles (1/2 cup)|
|2 cups||Vegetable stock|
|Salt and pepper to taste|
|Mexican cheese (optional)|
|Tortilla strips (optional)|
In a heated pot, add oil and onions, sauté until translucent. Add cumin, garlic, tomatoes, green chiles and vegetable stock; simmer 15 -20 minutes. Add carnitas and simmer another 10 minutes, adding salt and pepper to taste. Enjoy topped with your favorite Mexican cheese and crunchy tortilla strips.
