Ingredients:
| 1 lb | Charlie’s Pride Carnitas |
| 1 Tbsp | Vegetable oil |
| 1 | Small onion, diced |
| 1 tsp | Cumin |
| 1 ½ tsp | Garlic powder |
| 2 (14.5 oz) | Cans diced tomatoes |
| 1 (4 oz) | Can diced green chiles (1/2 cup) |
| 2 cups | Vegetable stock |
| Salt and pepper to taste | |
| Mexican cheese (optional) | |
| Tortilla strips (optional) |
Directions:
In a heated pot, add oil and onions, sauté until translucent. Add cumin, garlic, tomatoes, green chiles and vegetable stock; simmer 15 -20 minutes. Add carnitas and simmer another 10 minutes, adding salt and pepper to taste. Enjoy topped with your favorite Mexican cheese and crunchy tortilla strips.
