Carnitas are stuffed into a toasted baguette with pickled red onions, smoked Cheddar cheese, hoisin aioli and cilantro.
|1 lb||Charlie’s Pride Carnitas|
|¼ cup||Red wine vinegar|
|1 tsp||Kosher salt|
|1||Red onion, sliced|
|1 Tbsp||Hoisin sauce|
|1||Large baguette, sliced crosswise into ¼’s, then lengthwise for each|
|2 Tbsp||Cilantro leaves|
|4 slices||Smoked Cheddar cheese|
Pickle onions: in a saucepot, mix vinegar, water, sugar and salt. Bring to boil and pour over onions; chill. In a small bowl mix mayonnaise and hoisin sauce, set aside. Toast baguette ¼’s; spread bottom halves evenly with hoisin mayo, then layer with carnitas, pickled onions, cilantro and cheese. Top with remaining baguette halves and serve.
