Everyone loves a baked potato, but you'll love it more when it's stuffed with our signature BBQ beef, cheddar cheese and onion, all melted together in a hot oven until warm, crispy and delicious.

Ingredients:
½ lb | Charlie's Pride Beef Brisket in Barbeque Sauce |
2 | Idaho potatoes, baked and halved |
8 oz | Cheddar cheese, shredded |
½ | White onion, diced (about 4 oz) |
1 Tbsp | Fresh parsley, chopped |
½ cup | Sour cream (optional) |
Directions:
Preheat oven to 350°F. Remove centers from each baked potato half and reserve for later use. In a high sided bowl, mix BBQ Beef, cheese and onions; stuff into potato shells. Place in casserole dish and cover; bake for 10 minutes. Remove cover and bake an additional 5 minutes to crisp. Remove from oven and garnish with parsley; serve immediately with a side of sour cream.
