An upscale wrap for the uptown crowd, featuring Charlie’s Pride American Kobe Beef, Sharp New York Cheddar, Shaved Balsamico-Red Onions, Crunchy Romaine Lettuce and a Zippy Cocktail Mayonnaise wrapped in a Tomato Tortilla. Black tie optional.

Ingredients
1 - 1.5 lbs Charlie’s Pride American Kobe Roast Beef, thinly sliced
½ Medium red onion (peeled and very thinly sliced)
2 tsp Balsamic vinegar
4 Tomato tortillas
  Oil
3 Tbsp Spicy cocktail sauce
2 Tbsp Mayonnaise
8 slices Sharp New York Cheddar cheese
4 Romaine lettuce leaves (washed and dried)
Directions

Toss sliced onion in balsamic vinegar and let stand for at least 10 minutes. Preheat oven to 300°F. Place tortillas on lightly oiled baking sheet; bake for 2 minutes. Remove from oven; let cool on pan for 4 minutes. In small bowl combine cocktail sauce and mayonnaise. Spread a generous Tablespoon of the mixture onto each tortilla. Divide beef 4 ways and place evenly on each tortilla, leaving a 1″ border around the edge. Top each with 2 slices cheese. Place one Romaine leaf on the bottom half of each tortilla. Drain onions well, place ¼ onto each leaf. Roll up tortillas from bottom, securing each with 2 frilled toothpicks before cutting in half to serve. Enjoy with your favorite vegetable chips.

NOTE: Tomato tortillas can be substituted with plain tortillas that are brushed with a very thin layer of tomato paste.
