A lively variation on the classic Reuben, with grilled onions and peppers, and an extra kick of chipotle mayo.
|1 lb||Charlie's Pride Corned Beef Brisket, thinly sliced|
|8 slices||Rye bread|
|½ cup||Chipotle mayonnaise|
|1 cup||Grilled onions and peppers|
|8 slices||Provolone cheese|
Preheat oven to 350°F. Spread one side of 4 bread slices with chipotle mayonnaise. Cover with peppers and onions, then corned beef. Top each with two slices of cheese, then undressed bread slice. Heat in oven 1 minute, just until warm; serve immediately.
