
Beef and Parmesan Pasta Strata Casserole
An elegant yet easy, cheesy beef & noodle casserole with assorted vegetables that you can prepare in your toaster-oven. Makes 2-3 generous servings.
INGREDIENTS:
- 1 (17 oz) pkg Charlie’s Pride Beef Burgundy in Wine Sauce*
- 4 oz wide egg noodles
- 1 tsp salt
- 1 tsp extra virgin olive oil
- ¼ cup freshly grated Parmesan cheese, lightly packed (preferably Parmesan Reggiano)
- 6 oz (1 heaping cup) frozen vegetable medley of your choice
- non-stick spray
DIRECTIONS:
Preheat oven to 425°F and spray a 10” round baking dish (glass pie pan is ideal, adjust as needed for use in toaster oven) with non-stick spray. Bring 1½ quarts (6 cups) water with salt to a boil in a large saucepot. Heat Charlie’s Pride Beef Burgundy in Wine Sauce according to package directions until heated through. Add pasta to boiling water; boil for 7 minutes. Remove from heat, drain thoroughly. Place half the cooked pasta in a separate bowl and toss with oil, then Parmesan. Place heated Beef Burgundy into the empty pasta pot. Fold in remaining drained pasta and frozen vegetables. Pour beef & vegetable mix into the prepared baking dish and top with reserved Parmesan pasta. Bake as directed until pasta is golden brown.
Standard Toaster Oven: lower shelf for 20 minutes (or 15 minutes for convection).
Conventional Oven: in the top half for 20 minutes (or 15 minutes for convection).
*You can also substitute Charlie’s Pride Braised Beef in Savory Gravy.
