
A tasty new twist on the Corned Beef Reuben! Your favorite ingredients rolled up in a tortilla and sliced into colorful pinwheels for a fun and delicious appetizer. 32 pinwheels, or 4 hearty wraps.
1 - 1.5 lbs | Charlie’s Pride Corned Beef Bottom Round, thinly sliced |
4 (10″) | Flour tortillas |
Oil | |
4 Tbsp | Soft cream cheese |
1 tsp | Caraway seeds (optional) |
½ cup | Sauerkraut, squeezed dry |
¼ cup | 1000 Island Dressing |
8 slices | Swiss cheese, sandwich size, cut into ½ inch strips |
Spicy mustard (optional) | |
Mini pickle spears (optional) |
Preheat oven to 300°F. Place tortillas on lightly oiled baking sheet, bake for 2 minutes. Remove from oven and let cool on sheet for 4 minutes. Spread 1 Tablespoon of cream cheese on entire surface of each tortilla, then sprinkle a heaping ¼ tsp caraway seeds evenly over each. Leave the top 1″ of tortillas free as you layer remaining ingredients. Divide beef four ways and place evenly over each tortilla, then top each with 2 Tablespoons sauerkraut. Spread 1 Tablespoon dressing over each, then lay cheese strips horizontally over each. For each tortilla, roll tightly away from yourself and press the top. Place on a cutting board with the seam of the roll on top. Insert frilled toothpicks every inch across. Cut off the two uneven outside ends with a serrated knife, then cut between each toothpick and arrange on a serving plate. Serve pinwheels with a small bowl of spicy mustard and mini pickle spears, if desired.
